Hello our beautiful Gingerbread Girl fans.

If you live on the same side of the earth as me you are experiencing wonderful summer months.

Oooooh yeah, we are talking beautiful sunshine, pool and beach trips, mountains of fresh fruit and veggies, awesome healthy tanned skin, light summer dresses.

That to me is happiness.

What completes this summery joy are gorgeous, healthy treats like this. Amazing!

This baby above got created for Grandmas birthday few weeks ago.

I’m talking fresh berries, yoghurt, toasted seeds aaaaand so many other delicious healthy ingredients.

What I love about this recipe is that you can play and use whatever fruit you love or have available in your fruit basket.

The original asks for berries however we love to add mango to the mix for extra delicious tropical sweetness.

Use the recipe as your guide but play and experiment to create your own totally fav desert for hot summer months.

My dear friends

What I love about cooking is how flexible it can all be.

Use whatever vegetables need to go from your fridge, don’t worry about buying anything extra, just play with what you’ve got.

When it comes to spices, I love ( obviously 😉 ) using different spices and herbs in my kitchen not only for their taste but also the health benefits.

Dhal is one of those powerhouses of healthy goodness and amazing tastes.

Fresh garlic,onion, turmeric and ginger are my staples and I try to sneak it into most of my cooking. All antiviral, protecting us from the viruses and bugs in our environment, supporting our immunity.

This recipe can be served with many wonderful sides, make rice, flatbreads, put it on a bed of fresh spinach, top it up with yoghurt, sprinkle with chilli flakes if you like it hot…

Endless combos, lots of fun and many happy satisfied bellies.

The Gingerbread Girl’s Super Fast Veggie Stock

This baby is a must in your fridge or freezer.

When it comes to stock from the supermarket they are 99% filled with preservatives and those that are not get crazy amounts of sodium.

This recipe takes no more than 30 minutes to make from start to finish and you end up with gorgeous nourishing flavoursome liquid that is just the most wonderful base for your soups, stews, sauces and much more.

I usually double the amount and freeze the rest so anytime I need great flavours, it’s all handy.

What I love about this stock is that I can add any herbs or root veggies that are just in abundance in my garden ( or my friend’s garden 😉 ) and it can be a little bit different every time.

Enjoy, stock up and create the most delicious warming dishes.
